I don't know of any textbooks for flight attendants but I could offer to share my experiences: I once worked with three groups of young people who were on a training program for airport service staff. What I did was compile a list of materials relating to their situation such as articles about airport facility management, airport signs etc. Why not do the same for your group? You could read articles about all the situations a flight attendant has to handle. We could start a list with those situations and then do some research to come up with the right materials. Then we can create glossaries and exercises.
