There are lots of activities you can do. In most classes, even if there were a lot more students they would spend quite a lot of time working in pairs, doing roleplays, games, interviews etc etc. But in a class of two you also have the advantage that you can have them talking directly to you without cutting down on studet talking time and risking people being uninvolved and getting bored. Try here for lots of speaking activities, most of which would be suitable.

A lot of guessing games - for example hangman - aren't really speaking games but vocabulary games. Here's one which involves the students in a slightly longer speaking turn.

Ask students to describe one of the rooms in their house without naming it - the others have to guess which room it is. Give an example yourself before you start, trying to keep the most obvious information until the end. For example :
This is a room which I like very much because it's full of plants. It's not very big, but it's very cosy. There's a grey carpet on the floor, which sounds boring, but the other main colour - for the curtains, the cushions and the tablecloth - is orange, so it's really quite bright. This is the room in the house where I usually have my breakfast. I like to sit on the sofa and watch the morning news while I have a cup of tea and eat my cornflakes.
Obviously, this is for intermediate students. For beginners you'd need to simplify it.
