-A person has to have understanding __ demographical background about the listener.

My opinion: of is the correct form; on would be wrong. If we are saying that we need to understand (=grasp) something, the preposition is of, not on, above. If we use on after understanding, it would be talking about an agreement (=accord):

eg a tacit understanding on the need for a pay rise

Do you agree with me?
