They are all compound nouns consisting of noun + noun. Each part of a compound is described with its normal part of speech. For example...

blackberry : compound noun consisting of adjective + noun
roadworthy : compound adjective consisting of noun + adjective
on-going : compound adjective consisting of preposition + verb
freeze-dried : compound adjective consisting of verb + verb

etc
