Here are a few places to check out:
ideas for one-on-one activities
rummy game for group or one on one classes
ESL materials or beginners and kids' classes
curriculum for absolute beginner ESL classes

If you have an idea of what you might want to teach, it will be easier to give you some ideas on how to teach that.
