I don't do an awful lot of ESP courses but I suppose I'd teach them the basic grammatical structures, then add the relevant vocabulary. Whether it be a course for doctors, lawyers, footballers or whatever, they all use pretty much the same structures (present and past simple and continuous, question forms, modals, imperatives etc) - just concentrate a bit more on the ones that they appear to use the most. As for the skills, I don't imagine writing would be used very much, nor reading. I guess you'd be focusing on speaking.
As for practical materials, you could make up some flashcards but cutting out pictures from adult magazines, take in a video or whatever. Personally I wouldn't feel particularly comfortable, but if you \ your teacher is happy to run with it then the ideas are limitless, as with any ESP course. Role plays, board games, physical games, crosswords, TPR, chants.
